Cooking time: 100 minutes

  1. Mix flour, salt and dried thyme in a bowl.
  2. Add the beef and toss until evenly coated.
  3. Add half the oil to a pan on high heat.
  4. Add beef and cook until browned.
  5. Remove beef from pan and set aside.
  6. To the same pan add remaining oil and chopped vegetables on medium - high heat and cook until softened.
  7. Add back in the browned meat and add the stock, tomato puree, bay leaf and fresh thyme.
  8. Bring to the boil and reduce heat to a gentle simmer.
  9. Add in peeled and chopped potatoes.
  10. Cover and cook for 90 minutes or until beef is tender.
