Serves 2 persons

Cooking time: 30 minutes

  1. Pre-heat oven to 180°C/160°C Fan/350°F/gas 4.
  2. Cook rice according to packet instructions.
  3. Place 1/3 of the sliced pepper, 2 rings of onion, coriander and water in a blender, blitz together and set aside.
  4. Brush remaining peppers and onion with 1 tablespoon of olive oil and place on a baking tray.
  5. Place in the oven and bake until tender (approx. 20 mins).
  6. Combine turkey with oil and fajita seasoning.
  7. Heat a dry pan or wok to medium heat and stir fry turkey until cooked through.
  8. Combine cooked rice with pepper/coriander puree and divide into 2 bowls.
  9. Top with turkey, baked vegetables, avocado and sour cream.
  10. Add lime juice and serve.
