Cooking time: 30 minutes
- Pre-heat oven to 180°C/160°C Fan/350°F/gas 4.
- Cook rice according to packet instructions.
- Place 1/3 of the sliced pepper, 2 rings of onion, coriander and water in a blender, blitz together and set aside.
- Brush remaining peppers and onion with 1 tablespoon of olive oil and place on a baking tray.
- Place in the oven and bake until tender (approx. 20 mins).
- Combine turkey with oil and fajita seasoning.
- Heat a dry pan or wok to medium heat and stir fry turkey until cooked through.
- Combine cooked rice with pepper/coriander puree and divide into 2 bowls.
- Top with turkey, baked vegetables, avocado and sour cream.
- Add lime juice and serve.
