Cooking time: 20 minutes
- Add 1 ½ tsp oil to a pot over medium heat.
- Add garlic and cook for 1 minute, stirring to prevent burning.
- Now add kale, carrots, vegetable stock and red wine vinegar.
- Cook until tender for about 12 - 15 minutes, stirring often.
- Add lentils for last 3 minutes to heat through.
- In a skillet / pan place remaining oil on medium to high heat, season salmon with a little salt and pepper and fry for 3 - 4 minutes per side until cooked through.
- Serve salmon over lentil and vegetable mixture.
