Cooking time: 35 minutes
- Preheat the oven to 180C
- Place the eggs, ground almonds, banana, cinnamon, berries and almond milk in a blender and whiz for about 30 seconds until smooth.
- Use a muffin tin and cases. If you down't have any cases spray the tin with a little spray oil.
- Pour the mixture evenly between 6-8 muffin cases.
- Sprinkle each muffin with chopped nuts.
- Bake in the oven for about 25 mins until golden and firm to touch.
- Cool on a wire tray or they are delicious hot with a little Greek yogurt.
