Cooking time: 10 minutes
- In a measuring jug gently beat the two eggs with the ground almonds.
- Heat a little coconut oil in a frying pan on a medium heat.
- Using pancake moulds if you have them divide the mixture in 3. If you don’t have moulds it should work the same.
- Pop a few berries onto each pancake and leave till they are nearly set.
- When nearly set remove the moulds and flip over to seal the side with the berries.
- If you use blueberries they often burst with the heat and add delicious sweetness to the pancakes.
- Serve these with some natural yoghurt, we recommend 0% as there are healthy fats in the almonds.
- Add some fresh berries if you have them. Lovely weekend brekkie when you have a few extra minutes.
